What are the ingredients in Teriyaki sauce?
Traditional teriyaki sauce consists of four main ingredients, including sugar, mirin, soy sauce and ginger. The sauce is sweet and salty at the same time thanks to the soy sauce and sugar. I used a combination of palm sugar in my sauce for a more natural sweetener and as always I also added some chopped garlic.
You can really use this teriyaki sauce as a marinade for all kinds of protein sources and vegetables. So if tempeh isn't your thing, swap the tempeh for tofu, but teriyake sauce with salmon is also very tasty!
Ingredients for the teriyaki sauce:

- 250 ml water
- 2 tbsp vinegar, if you have it rice vinegar (mirin)
- 75 ml soy sauce (for a gluten-free sauce you can use tamari)
- 50 gr palm sugar
- 1 tbsp grated ginger
- 3 cloves garlic pressed
- 1 tsp Aleppo pepper
- for a non-vegan version you can add
- 2 tablespoons corn starch
- 75 ml cold water
- Method:

- Heat all the ingredients for the sauce until the sugar is dissolved.
- Cut the tempeh into the desired shape and put it together with the tempeh marinade in a bowl.
- Marinate for 1 to 2 hours at room temperature.
- Bake the tempeh with marinade over medium heat in a wok
- In the meantime, dissolve the cornstarch in the cold water.
- Add this mixture to the tempeh in the wok for the last few minutes.
- It ensures that sauce binds nicely and shines.
- Serve on a bed of spinach and garnish with some nice things you have at home, almond shavings and tomatoes, fried onions, spring onions, a slice of red pepper, black sesame seeds or a slice of lemon.
