Indian Spinach Soup / Palak Soup Recipe
Spinach is widely used in Indian cuisine. Popular dishes include Saag Paneer (spinach with fresh cheese), Aloo Palak (spinach with potatoes) and Saag Bhaji (spinach curry).
This Indian spinach soup, or Palak Soup, is wonderfully creamy thanks to the addition of coconut milk.

Ingredients:
- 1 bag fresh spinach
- 250 ml creamy coconut milk
- 1 onion, finely chopped
- ¼ tsp asafoetida
- ½ tsp ground cumin seeds
- ½ tsp ground coriander seeds
- coconut oil
- lemon
- salt and pepper to taste
Method:

Heat coconut oil in a pan and sauté the onion and garlic for 2 minutes until translucent.

Add the spices and fry briefly.

Add the coconut milk and 250 ml of water.

Add the spinach and let it wilt.

Blend the soup until smooth; add extra water if needed.

Season with salt and pepper.

Serve with a slice of lemon.
